I would imagine there'll be quite a lot of missing info, given that you've linked to the Cyberpunk 2077 guide.

So the gameplay is just two buttons and is mostly just grinding to level up your stats. Would it then be possible to cheese this by leaving the game running with a turbo controller?

Not quite, because you still have to back out to the main menu fairly often to upgrade your character, buy new ones and change stages, plus the abilities have to be activated by pressing 2 buttons simultaneously else they won't trigger.
