You'll get points everytime you complete a race on one of your tracks, or while using a mod or kart you made. Hosting in a casual session can provide you with a lot of points quite quickly. You should get 25XP every time you use (or someone else uses) one of your creations online. Creating a casual event online and using your own tracks is the quickest way of getting XP by racing, although sometimes it is hard to get a session going. One trick to getting XP is to use your track in a time trial event. Each time you load up the track and set a new fastest time you'll get 25XP for it, so if you start off with a very slow time and then improve it by a second each session, you'll get the XP reward each time.
